Capital Ale House Fredericksburg Sous Chef Sean Patrick Duffie has his recipe ready for the July 31 FXBG Sandwich Invitational, but the sandwich doesn’t yet have a name. He’s open to suggestions.
The sandwich is a play on the restaurant’s successful Salmon and lox combination, Duffie said. “I wanted to make a nice, lite, colorful summer sandwich,” he said.
“I actually built a double-barrel smoker in the kitchen and I smoked egg bagels, so that they have a real smoky, sharp flavor. I whipped up some cream cheese with dill, chive and lemon. I have some smoked salmon on there. We’re Virginia centric with our food, so the vegetables on it — the English cucumbers and the tomatoes — are local. I will finish it with alfalfa sprouts at the competition.”
“It’s a lot of work, but it’s fun,” Duffie said. “I think it’s neat for all the restaurants to come together like this. I hope I beat them all!”
If you have a name suggestion for the sandwich, email [email protected].
The FXBG Sandwich Invitational will be held 6 – 8 p.m. in Hurkamp Park at William Street and Prince Edward Street. Tickets are $25 per person and include sample-size sandwiches from all 13 participating restaurants and beverages. Ashleigh Chevalier and her band will be providing live music and there will be a free photo booth by Owik Pics.
Tickets are available at the Fredericksburg Visitors Center, 706 Caroline St.
Capital Ale will also be participating in Restaurant Week August 1 – 10. Their sample menu is online.
