Jose Gonzalez and his family, owners of the original Soup and Taco at 813 Caroline St., are changing the name and menu of their Eight-O-Six Bistro to become a sister-restaurant to their popular downtown eatery. Soup and Taco II is located at 806 William St.
The family opened Eight-O-Six Bistro in January 2015, the same month they moved their La Rosetta International from Stafford to the historic Chimney’s building at 623 Caroline St. in downtown Fredericksburg.
Eight-O-Six Bistro never took off, so the family is making the change.
Soup and Taco II will feature casual dining for traditional Mexican, Tex-Mex and Latin American dishes, with beer, wine and cocktails — including margaritas.
